The Bournemouth & Poole College impresses at The Hotel & Catering Show

The team at the BIC

2nd year Hospitality Supervision students were given an opportunity to shine at the recent Hotel & Catering Show at Bournemouth International Centre recently. They were given a blank canvas in which to design, plan and manage a ‘pop up’ restaurant.Tutor Josephine Pearce and Emanuel Latis (student restaurant supervisor) attended planning meetings with outside event agencies to set up a rustic restaurant from scratch.  The team worked with James Golding, the Chef from The Pig restaurant in Brockenhurst and an ex-graduate from the Specialised Chefs course at The College. Tutor David Boland selected a small team of 2nd year Specialised Chefs to assist James in preparing  a memorable dining experience. The ingredients used were grown, smoked, prepared, cooked and presented in a rustic style. The students involved were a credit to The College and had a ‘can do’ attitude throughout the operation. Sponsors and visitors at the The Hotel and Catering Show highly commended the food and service.  A few students even received job offers from the guests dining at the pop up restaurant!  It was a true showcasing of the capabilities of these students, who cooked for and gave immaculate service to 60 paying guests.
