What is the Junior Chefs’ Academy?

The Junior Chefs’ Academy is designed for young people aged between 14 and 16 years of age who have a lively interest in cooking and wish to develop professional cookery skills and techniques relevant to the Hospitality and Catering Industry. It is also relevant for those who want to learn a new life skill or want to use the course as part of their Duke of Edinburgh award.

We are only 1 of 5 Colleges in the UK able to run the Compass Group UK Junior Chefs Academy course.

What will I learn?

The course runs for 10 weeks based within the training kitchens at The College’s Lansdowne campus. It begins with an introduction to the kitchen, how to use the equipment and important health and safety issues. Over the following nine weeks you’ll be taught basic cookery skills covering vegetables, soups, pastas, sauces, meat, fish & desserts and more.

On the tenth week you will be able to invite guests to your Graduation ceremony where you will be presented with a medal and certificate. You will prepare and serve a lavish dinner for your invited guests.

What do I need to be able to do this course?

You don’t need any specific experience to sign on to this course. All we need is for your parent/guardian to complete a medical questionnaire which must be received before the start of the course.

Throughout the course you will be required to wear non-slip shoes that cover and protect your feet, black trousers and a white T-shirt. You’ll also need to bring a container to take home your finished dishes to enjoy with your family.

What courses can I do after this?

At aged 16 you may want to progress to a full time course, like the Diploma in Professional Cookery, BTEC National Diploma in Hospitality or onto a College Apprenticeship programme.

The cost of the 10 week course is £100, this includes chef whites provided and the students bring the food prepared home with them.
