Introduction:

The Specialised Chefs' Scholarship is a prestigious 3 year Advanced Apprenticeship which offers you the opportunity to train in all aspects of professional cookery to the highest level. The Scholarship is sponsored by the Academy of Culinary Arts and Waitrose and is managed by The Bournemouth & Poole College.

You will be sponsored by individual hotels and restaurants where you will work during your training. These are mostly, but not all, in London which includes Claridges, The Ritz, Restaurant Associates, House of Commons and Chewton Glen.

Advanced Apprenticeships are a great option for school leavers who want to get straight onto the career ladder. An Advanced Apprenticeship is equivalent to 2 A levels or 1 vocational A level.

Entry Requirements:

You must be under 19 years of age to apply. You need, or will have, GCSE English and maths at grade D or above, plus four additional GCSEs at grade D or above.

You must be prepared to train and live in London hotels, restaurants or country house hotels. Successful entry will depend upon interview and assessments.

Course Details:

The course includes:

  • Kitchen and Larder
  • Patisserie and confectionery
  • Health, Safety and hygiene
  • Food service through dealing with customers
  • Culinary and conversational French
  • Husbandry and food issues

Course Assessment:

You will be continually assessed throughout your training and will take some external tests/examinations for key skills (if required) and technical certificate. Your progress will be reviewed regularly and achievable targets set to ensure you complete your course.

Course Progression:

On successful completion you could work internationally and travel the World.

Additional Information:

To gain the Academy's Diplomas in Professional Cookery you will work towards the following qualifications:

  • NVQ Level 2 & 3 Professional Cookery
  • Key Skills in Application of Number Level 2
  • Communication Level 2
  • Employment Responsibilities and Rights
  • NVQ Level 2 Food and Drink service
  • Culinary French
  • ABC Patisserie

At College you will receive a weekly training allowance plus travel cost. Whilst working with your sponsor, your salary will be based on local rates of pay.

While your technical skills and knowledge will develop over the course of your Apprenticeship and you will also need to demonstrate to the College you possess relevant skills and personal qualities and are willing to work and to learn.
